Sarah — natural sciences nerd. The kind of person who reads fermentation papers for fun. Vinz — skater who quit alcohol. Not because someone told him to, but because he decided the hangovers weren't worth it.

They met tibicos through Vinz's mom in Bourges, France. She'd been making water kefir the old way — no shortcuts, no pasteurization, just living cultures doing their thing. One taste and it clicked: this is what a drink should be.

"We moved to Barcelona. Started experimenting. Perfected the recipe in a tiny kitchen with more glass jars than furniture. The neighbours thought we were running a lab."

That kitchen lab became KEFAS. A brand built on the principle that if you can't pronounce the ingredients, you probably shouldn't drink it. Every batch is wild-fermented, naturally carbonated, and made by two people who care more about what's in the bottle than what's on the label.

The one that started it all. Clean, bright, and deceptively simple. Citrus on the nose, gentle sweetness that fades into a dry, effervescent finish. Yellowish gold in the glass — like liquid sunshine filtered through a Barcelona afternoon.

Wild Berries ⚡ Deep Red

"Fire of Barcelona." Named for the city that burns in the best way. Deep red in the glass, like a sunset over Montjuïc. Wild berries hit first — tart, jammy, alive. Then the fermentation kicks in with that signature KEFAS bite.

This isn't a fruit juice pretending to be healthy. It's a fermented drink that happens to taste like the best berries you've ever had.

HOW TO BREW KEFAS.

Four steps. Zero excuses. Infinite bubbles.

Sugar Water

Dissolve 50g sugar in 1L water (or 100g in 2L). Use a glass jar. Mineral or filtered water only.

⚠️ Stir with wood or plastic. Never metal — it kills the culture.

Add The Goods

Drop in your KEFAS grains + a slice of lemon + a dried fig. The fig feeds the culture. The lemon keeps things balanced.

💡 Grains are alive. Treat them like a tiny pet that makes you fizzy drinks.

Ferment

24-48 hours at room temp (~20°C). No direct sunlight. Cover loosely. Strain = first ferment done.

🔥 Want more fizz? Second ferment: add fruit or spices to strained kefir, seal tight, wait 12-24h.

Repeat Forever

Grains back in fresh sugar water. Start again. They grow and multiply — eventually you'll have enough to share.

🎁 Extra grains? Give them to friends. Start a kefir rebellion in your neighbourhood.

Strong Glass Only

Use pressure-rated glass bottles. This stuff builds carbonation. Weak glass + live ferment = mess on your ceiling.

Cold slows fermentation. Store in the fridge after bottling. Best within 7 days — but honestly, it never lasts that long.

Don't Shake

It's naturally carbonated and under pressure. Open slowly over a glass. Unless you enjoy kefir geysers. We don't judge.

Clean, reliable, grains love it. This is your baseline. Start here.

Brown Sugar
Richer & Slower

Deeper flavor, more molasses. Ferments a bit slower but adds complexity.

Panela / Molasses
Mineral Boost

Packed with minerals. Grains thrive on it. Gives an earthy, caramel edge.

Coconut Sugar
Mix with Cane

Low glycemic, subtle caramel. Mix 50/50 with cane sugar — pure coconut sugar starves the grains.

Maple Syrup
Small Amounts

Rich, earthy. Use small amounts blended with cane. Too much slows fermentation.

Honey
Small Amounts

Raw honey is antimicrobial — can harm grains in large doses. Use ≤25% of total sugar. Mix with cane.
